Mistral AI offers several usage paths: Le Chat as an end-user and team assistant, Mistral AI Studio / La Plateforme as an API/developer platform, and enterprise deployments with private deployments, custom models, UI, and tools. Positives include EU hosting by default, API no-training, connectors without training use, libraries without training use, DPA, admin privacy controls, data export, team features, and private enterprise deployments. A critical point is that not every feature is automatically available on-premises or fully isolated, and that subprocessors, US endpoints, feedback, moderation, and the specific enterprise configuration must be reviewed.
